Scrambled Tofu with Fruit and Toast. I also make smoothies with Silken Tofu, Spinach, Berries, and Cashew Milk. I second Guac Toast. I'll sprinkle Chia on it or some nuts or even a few sprouts.

    Smoothie.
    mine at the moment:
    oats
    pea proteine
    almond or soy milk
    soy yoghurt
    fresh fruit

Put in blender. Leave overnight in fridge and blend in the morning. Quick, simple and nutritious.

I usually have leftovers from the night before, but if I don't have that I will have tofu scramble (you can make it the night before), a breakfast burrito from Sweet Earth, a Gardein tofu scramble pocket, avocado toast, or some fruit. If you don't like oats, you can also consider substituting another grain -- I've had rice, millet, buckwheat, and polenta for breakfast.

I've been making chocolate chia pudding. Mix it up the night before and let it sit in the fridge overnight.
