Help! My mom's birthday is this weekend and I want to bring dessert - but she has diabetes and must eat low-carb. I was thinking dark chocolate covered strawberries, but I'm not sure!

Any ideas????

Chocolate covered strawberries sounds perfect to me.

I am not low carb, but I adore this chocolate mousse. I think it has 4-5 grams of carbohydrates per serving, but if you did something like Splenda it could be even lower.

I made a low carb cheesecake with a nut crust that was to die for!!! I've got a low carb brownie recipe waiting to be made this week as well. Pinterest is my best friend for low carb ideas!!

Ricotta with cocoa powder (unsweetened) and stevia drops

umm, most chocolate is still loaded with sugar.. and even though strawberries are among the lowest sugar fruit, they still have more than necessary. I wouldn't consider this a low sugar desert, and certainly wouldn't fall into "low carb"

how about a sugar-free cheesecake? You can make any cheesecake recipe and add in Sucralose(what I use) or Swerve (don't use stevia!! baking makes it bitter) and its delish! 2hy1ufza5b9b.jpg

Your idea of strawberries and chocolate sounds great! Angel food cake is good too as long as you use a sweetener and there are lots of ideas on dietdoctor.com or ruled.me

You can purchase chocolate with little or no added sweetener in virtually all supermarkets and add your own low carbohydrate sweeteners. I don't know for sure how it would work with chocolate covered strawberries, but it would work well for most creamy desserts (I know because I've personally tried it).
