I've noticed my fat intake is pretty low. What are some of your favorite fats? I am planning on getting some avocado in my diet. Occasionally I add olive oil to salad. Most of what I eat just happens to be low-ish fat.

Increasing fat intake on the regular made my health so much better. I feel satisfied. I get fat from a wide range of foods: Milk (full fat milk, yoghurt, butter, cheese), meat (pork, chicken, lamb, beef), fish (salmon, mackerel, herring, trout), nuts (peanuts, almonds, walnuts, pecans, cashews), oils (sunflower, rapeseed, olive etc).

Olive oil and nuts. I actually wish I didn't like these things quite so much. They are the things I have the hardest time controlling. I'd probably be one of those people asking how to hit my calorie goal without them.

Olive oil, peanut butter. Butter (cooking with it, or adding to a baked potato or sweet potato).

Bacon fat: Great as a warm dressing on spinach, great for fried or scrambled eggs
Duck fat: You haven't lived until you've eaten duck fat fries
EVOO: So many different flavor profiles to choose from
Clarified butter: Good for high heat cooking
Rice bran oil: Great for stir fry
    Avocado oil: Great for vinaigrettes

I could tell you my favorites, but not are are healthy for me.

I'd cook with a little butter or oil to get more in. I love peanut butter, but have kidney stones and have to eat low oxalate. I also love cheese and avocados. And ice cream. I shouldn't be eating too much cholesterol, so several of those aren't so great for me.). For oils I keep olive oil, sunflower oil, grape seed oil, coconut oil, walnut oil and avocado oil on hand in some assortment for the different textures and flavors.
