Gluten free Recipes

If you like banana bread, I have an awesome recipe that is gluten free, dairy free & refined sugar free too!
Recipe following...
Ingredients:
200g gluten free plain flour
1 1/4tsp gluten free baking powder
1/2tsp bicarbonate soda
1tsp cinnamon
3-4 ripe bananas, mashed
4Tbsp Apple sauce/puree
2 egg whites
1 handful nuts (I like walnuts) optional
Method:
Preheat oven to 180 C/160 C fan.
Prepare loaf tin.
In a large bowl, mix all dry ingredients till well combined.
Add wet ingredients to the dry mixture & mix throughly, until combined. (I use a whisk to combine, makes it fluffy)
Bake for approx 45-55mins, or until browned on top, or if a skewer or knife comes out clean after inserting into centre of loaf.
I love eating it still warm with nutalex, but you can allow to cool & then cut slices.
I find it keeps well in an airtight container in the fridge for up to a week, or freeze the slices to stick in the toaster or samwich press for a quick brekkie or snack!

my brother is gluten and dairy free- it's such a pain!! You can get gluten free pasta and use make a red sauce to go with it. This site has some good ones. I love crock potting it! The chicken curry is super good.

Arepas are a standby for me (sort of a corn-based english muffin) - just add water to the masarepa flour, form into patties, and heat on skillet. Top with mustard and hard boiled eggs / cottage cheese/ tuna salad (whatever you might otherwise put on crackers or bread). other quicker alternative: gf crackers. (Though I can get away with wheat-based crackers since I'm not too sensitive).
gf pasta is pretty decent. Bean thread is good (an excellent noodle for stirfry).
I don't bake. And baked goods don't really fit into my calories anyway..so I can't really help you there.
