Buffalo Ranch Chicken Salad
Today, I made myself a buffalo ranch chicken salad for lunch using stuff I had on hand. I ended up really, REALLY enjoying it. The zest of the pico, with the bite of the wing sauce and the crunch of the chicken made for a great combination. Ended up being 450 calories, with the fried popcorn chicken and the full-fat ranch dressing. The recipe could easily be lightened by substituting grilled chicken instead of fried, and lite ranch dressing instead of the full-fat variety (unfortunately, I was out of lite and had to stick with the real stuff, LOL). Will definitely be having again!
2-3 cups mixed greens
1/2 cup prepared pico de gallo (so much tastier than plain diced tomatoes, as long as you like cilantro)
1/4 cup shredded colby jack
1-oz. popcorn chicken, thinly sliced after frying
3-tbsp. ranch dressing
1-tbsp. buffalo wing sauce
2-3 cups mixed greens
