Vegan - no pasta, rice or bread

Hey, I was wondering if anyone had any vegan recipes they would be willing to share?

How about quinoa, millet?
Or use potatoes in place of pasta and rice. There's also cauliflower rice that you can buy in the freezer section. Lettuce wraps are another option... dump your protein foods inside.

How are you on spices? My dinner tonight was sort of Aloo Saag: I fried onions, butternut squash, potato and tofu in vegetable oil and Schwartz saag aloo powder for ten minutes, and then added water to the saucepan and boiled it until the butternut squash went soft.
EDIT: there was also a dollop of ketchup in there, as I'm out of tomato puree. Oh and a 35g sachet of pre-mixed saag aloo powder lasts for far more meals than the packet suggests.1 -
How about all the squashes and the beans? There's tofu too.

Easy chickpea curry: fry onions till soft. Add crushed garlic and curry powder to taste - fry briefly. Stir in a little flour (any kind). Add cooked chickpeas and water with a little veg stock powder or crumbled cube. Cook until hot through and thickened. If you want you can add coconut milk.
You can add any fruit or veg you want, either at the onion frying stage (eg carrot, squash, broccoli/cauliflower) or with the water (eg frozen peas, peppers, apples). Raisins or sultanas are a nice addition. Note this is not any kind of authentic anything but it is quick, easy, tasty and vegan.1 -
Chickpea "meatballs":
2 cups cooked Garbonzo beans
2-3 tbsp egg Replacer (plus 4-6 tbsp water)
1-2 tbsp water not for egg Replacer
Whatever seasonings you want
1.) Add water and egg Replacer and mix together really good, then let sit (package will tell you for how long; Bob's Red Mill Egg Replacer is for 1 minute)
2.) combine egg Replacer, the rest of the water, seasoning, and all the garbonzo beans together in blender or food processor and blend until smooth-ish.
3.) roll into balls (add more water if needed so it doesn't stick to hands)
4.) put in 450 degree oven for 20-30 minutes (turn them over halfway through)
5.) when cooked, take out and let them cool for 15-20 more minutes to let them firm up a bit more.
