Please do define more clearly what you are looking for. Specific calorie count, grams of protein, fiber, vegetables, no canned cream of mushroom soup?
Many casseroles you get a mix of vegetables and proteins and a starchy carb.

I highly recommend this cauliflower & chicken sausage casserole from The Kitchn. It makes 4 large servings at 340 calories each, ~7 grams of fiber and 19 grams of protein. Partially cooking the cauliflower before mixing all the ingredients together and baking makes the florets come out tender and almost creamy.

I love this spaghetti squash casserole. Very filling and tasty! Can easily be done without the breadcrumbs as well.

I switch out the regular pasta in casserole recipes for a lower calories version made by Fiber Gourmet. It tastes pretty much the same to me, though I will warn you that it is very high in fiber so go easy on the portions if you're not used to a lot of fiber in your diet.

This is off the top of my head but I found this AMAZING and SO easy vegan "alfredo" sauce. So that can be your creamy sauce and add veggies of your choice, spinach and a meat of your choice. not sure of the calories for this dish but im guessing not much :)
