    Finally just bought myself a crock pot - excited to try some of these!

    This sounds amazing! Do you think coconut oil would work instead of olive oil? Would long term high heat cause issues or smoke?

    Funny you should ask. I did not measure this but I threw this in the crockpot this evening.
    A pack of thin steaks, 1 small onion, one half of a red bell pepper, one half of a green bell pepper, two clothes of garlic. I threw in some chili powder, cumin, oregano, salt, pepper and a bit of cayenne. Squeeze a bit of lime juice and she's cooking right now4twc7jthi09z.jpg

    I've done a "chicken enchilada lasagna" in the crock pot before!

    I don't have the exact recipe on hand but essentially:
    -season and bake however many chicken breasts you want, then shred them
    -spray the inside of a crock pot with cooking spray and line with a tortilla
    -layer chicken, enchilada sauce, sour cream, cheese, salsa, onions, cilantro, whatever you want
    -add another tortilla
    -wash, rince, repeat

    cook on low until the cheese is all gooey and melted, approximately 2 hours or so.

    SUPER GOOD! :)

    Flat cut brisket seasoned with salt and pepper
    3/4 jar salsa

    Cook 4-5 on high. 6-7 on low

    Shred meat and return pot. Add 1/4 jar salsa if it needs moisture.

    Sandwiches
    Salads
    Eggs

    Mine is called Herbal Chicken, definitely not low in sodium.

    Skinless, bone-in chicken thighs
    Teriyaki sauce
    Soy sauce
    Lawry's seasoning
    Garlic salt
    Basil
    Oregano

    Adjust liquids and seasonings for how many chicken thighs you have. Put foil on the top of the ingredients so that it really steams the chicken. About 6 hours on low. Don't use boneless thighs - they get rubbery.

    Click on the star in the upper right hand corner...it will "bookmark". If you hold the cursor over the star, it says "bookmark." You don't need to "bump" to save.

    Couple days ago I threw 3 chicken breasts and 4 thighs in the crockpot. Covered with a jar of tomatillo salsa and a jar of black bean & corn salsa (both medium). Also a can of coconut milk. Cooked all on high for 4 hrs, then pulled out the chicken and shredded it. Put chicken back in the sauce and stir all around. Served on roasted spaghetti squash. Absolutely delicious and extremely easy (I can't cook, and basically hate doing so).

    Pepper Steak

    Thin Sirloin, frozen, cut into thin strips
    2-3 peppers
    onions to match - both chopped/sliced in larger pieces put aside, make sauce first in crockpot.

    In crockpot add one small can tomato sauce-low salt, 1 tbsp brown sugar, 2 tsp worcheshire, 1 tbsp hot sauce (I use Franks and you can use more or less depending on your taste), and I add 1 tbsp brown gravy
    mix - this can be left out if you don't want to add processed.

    Mix the sauce the add the meat, place veggies on top. 6-8 hours low, 4-5 on high. I check near the end and if the meat is tender, I make the rest of my meal.

    I serve over brown rice or quinoa. You could serve over anything. Broccoli, rice, potatoes, etc.
