Jackfruit (green, with spicy sauces like chili/lime; or ripe, just plain). Mamey. Guavas. Limequats if you can find some, kumquats if you can't. Fresh lychee. Beet greens. Celeriac. Jicama. Kohlrabi.
On the more mundane front: Oven-roasted cabbage. Actually, almost any veggie roasted. Soups made with pureed white beans for thickening, plus veggies of your choice. Squash or pumpkin soup.1 -
I would have suggested Morningstar Spicy Black Bean patties, but if you're on fruit and vegetables only. . . I also like pumpkin soup. Sub in vegetable stock for chicken stock and add a dash of Mckay's seasoning.0

Morningstar corn dogs are the bomb! Especially if you heat them in the oven, not the microwave. I'm not even a vegetarian, but I buy them because they taste great and have less calories than real corn dogs.
For homemade stuff, I made a veggie lasagna last week and it was sooo tasty. Tomorrow I'm making vegetarian sweet potato chili (this recipe.)
I want to learn to make some Indian vegetarian dishes too.0 -

From this morning's breakfast: hash browns made with frozen steamable roasted potatoes (I microwaved them for about half the recommended time before throwing them in the skillet with some butter -- oil probably would be better for the cooking temperature, but I wanted the butter flavor), peppers, onions, and cherry tomatoes all leftover from last night's fajitas, and a little freshly shredded cabbage, plus salt and pepper. Yum!0

Countless great recipes in any number of cookbooks.
Tonight I made a couple of vegan curries/stews. First was a golden lentil stew that is thickened with puréed cashews. Second, since I had the cashews, I made a mild (so kids would eat it) curry with ground cashews, veggies, coconut milk and the aromatics (fish sauce, ginger, garlic, lemongrass, garam masala).0 -
I'm working my way through the 1,000 Vegan Recipes cookbook. Hard to find recipes in it that aren't delicious! Tonight is red bean jambalaya (in which kidney beans replace the meat).0

Mash up an avocado and mix with sriracha and nuts (like cashews or walnuts). YUM!0

can you eat crackers? I eat one wasa cracker with 2 tablespoons mashed avocado spread on and two slices roma tomats on top with cracked pepper. very good0
