I wasn't sure how these would come out but oh my goodness they were sooo good I thought i'd share. I used in each pepper half a cup of green giant cauliflower rice, 1 oz of jenny-o ground turkey, 1 oz of sauteed onion, and a quarter cup of contadina tomato sauce. each pepper ends up only 140 calories and once baked you can't tell its not rice. These are perfect for a day where I want a light dinner or lunch. making more today so I can freeze them for nights I cook stuff for the family that I don't want

Stuffed pepper soup is nice too. I toss everything in a crockpot, I don't cook the rice separately. I just add extra water. This would work with riced cauliflower too.....just add it at the end.

Great idea! Never thought of using the riced cauliflower for stuffed peppers but I'm definitely giving it a try now1

I'm making stuffed peppers tonight. I use ground turkey and quinoa with tomato puree and fresh basil.1

I love this recipe too. I freeze it in individual peppers so I can bring them to work.

I use quinoa in place of the rice and they are delicious!0
