strawberry banana walnut pancakes

In a medium mixing bowl combine
1 cup whole wheat flour
3/4 cup old fashioned oats (I put them in a bowl and rub them between my hands until they're coarse flour)
1 tbsp + 1 tsp baking powder
1 tbsp packed light brown sugar
1 tbsp truvia or granulated splenda
1 tbsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cloves
In a small mixing bowl combine
1/4 cup egg substitute
1/2 tbsp oil (I use olive oil)
1/2 small banana, mashed
1 cup 1% or fat free milk or almond, soy or coconut milk
1/2-3/4 cups water (depending on how thick you like your pancakes)
1/4 cup chopped walnuts
Add wet ingredients all at once to dry ingredients and stir until well combined, drop into heated nonstick pan by 1/2 cups, place 3 slices of banana on top of each pancake before flipping. Top each with 1 medium strawberry, sliced and 1 tbsp maple syrup. For the kids I make a smiley face with the banana and strawberry slices and hair with fat free redi whip. I use 50 calorie coconut or almond milk and 100 calorie syrup, prepared these are about 145 calories each. Enjoy!!!!

If you don't care for walnuts you can use pecans and if you don't like bananas you can use 1 1/2 tbsp unsweetned apple sauce in place of the mashed banana in the batter and omit the slices from the pancakes0
