Mexican Casserole- whole family will love!!!
I got this recipe from Comfort food on a Diet cookbook, but made a few changes....it comes up at 394 calories!!!
Ingredients:
1lb ground turkey
1 can corn, drained
1 can light pink bean, rinsed and drained
1 jar salsa, however hot you like it
1 cup uncooked white rice
1 cup reduced fat cheese
1 3/4 cups water
2 tsp, ground cumin
fresh cilantro, to taste
Directions:
Crumble and brown the ground turkey in a pan with about 2 tsp. of cumin to season. Once meat is cooked, combine with all other ingredients, except cheese, in a large casserole dish.
Cover with foil and bake at 375 for 45mins.
Uncover, top with cheese and bake for 5 more minutes or until cheese is melted.
Yummy...for 394 calories

I made this for dinner tonight and it's awesome! Really fast and easy. The only changes I made were that I added sauteed crimini mushrooms and used fat-free cheddar cheese. I swear, you would never know it was so low-cal. Next time I am going to add some green chilis too.

I have done it with brown rice, what I did was use cooked rice and then eliminated the water and only cooked it for 30mins.
I am sure that you can use uncooked brown rice, but I wasnt sure how long it would take to cook the rice so I havent tried it yet...let me know if it works!!0 -

im here to testify! this is good! my 11 year old daughter said with a mouth full "omg this is so good!" However i switched it up. Instead of putting rice in it i made it minus the water and rice and we put it on tortillas. Took me 20 minutes TOTAL!0
