Turkey and Refried Black Bean Tostadas

Turkey and Refried Black Bean Tostadas
Serves 9
Ingredients:
2 cups chopped cooked turkey
1/4 cup onion, chopped
I Roma tomato, chopped
2 can diced green chilies
1/4 roasted red pepper
2 teaspoons chili powder
2 teaspoons cumin
salt and pepper to taste
If you like a little bite like I do, add 2 tablespoons Beano's Buffalo Sandwich Sauce (you can get it in the deli area of Walmart)
1 can 99% fat free refried black beans
Kraft Shredded fat-free cheddar (about 1/8 of a cup on each tostada)
Tostada shells (already made or bake your own)
Heat refried beans in a small pan. Spray a heavy skillet with cooking spray. Add onion, tomato, green chilies, and red peppers. Saute until onion is clear (about 10 minutes). Add spices and turkey then mix well. Cover with a lid and simmer about 10 minutes. Place tostada shells on a plate and top with 1/8 of a cup of beans, 1/4 a cup of the turkey mixture and 1/8 cup of the cheese.

kbirk1963: Not all fat free but mostly. I had gastric bypass so I have had to change and adapt recipes to low fat or fat free and sugar free.0
