Should I Exercise Less?

To start, I weigh all of my food and eat a lot of the same things daily so I know that my calories are accurate. I've lost over 70 pounds through counting calories and I would walk a 5k 3-4 times a week. I find it difficult to reach more than 1400 calories a day and MFP has me set at 1860 a day. A few weeks ago, I started upping my cardio to a more intense cardio and doing it more often. Once I did this, I noticed that I stopped losing weight. I am thinking because I burn more calories, maybe my deficit is too high and I am going into starvation mode? I have no idea if this is the reason, but it is the only thing that has changed.

If you were going into starvation mode, you'd starve, lose massive amounts of weight, and then die.12

I went through a month stall when I started going hard in my workouts. Then i dropped weight fast. Might just be the body storing water to heal you faster but I'm not a fitness guru or doctor.

It's more likely to be from water retention due to the increased activity. It should taper off after a few weeks.11

odds are you've got some water weight retainage going on.
What's a few weeks? 2?
or like 4? - because if it's four I'd be more inclined to revisit food- if only 2- stay the course. Odds are it's going to "whoosh" off (that's a thing- really)7 -
So you're supposed to eat 1860 but only eat 1400? Was there a reason you upped your cardio? How are you feeling? Energy levels, hunger, etc?0

I eat pretty clean so a lot of the foods I eat are very filling with protein or fiber but less calories. I have days I may get to 1600, but I get full easily with the types of food I eat.0 -

Just temporary water weight, keep doing what you're doing.2

There are "clean" foods that are calorie dense.
Instead of chicken, eat beef. Whole eggs. Avocado. Nut butters... Just to make a few higher fat options.2 -
If you've upped your workout, make sure you are also "stoking the furnace". If you don't eat enough you also won't get great workout results, and maybe not get enough protein and such to sustain your efforts.
Also don't forget to have a rest day 1-2x a week....doesn't mean you have to stop exercising, just do something less intense or something different (for instance, if you usually do running, do a workout of yoga, moderate swim, or bike ride).1 -
It's probably from the changes in exercise, give it time.
That said, I'd eat as much as possible and not leave any calories uneaten.1 -
