I have been low/no carb for a week and half now. Drinking tons of water and eating right. Started walking everyday. But I have only lost one pound. I'm getting so discouraged. What am I doing wrong?

Low carb/no carb doesn't matter. What matters is that you are consuming less calories than you are burning. You lost a pound! In a week and a half. Way too early to start getting discouraged!!6

You've lost one pound in a week and a half; that's great progress. You need to adjust your expectations. The weight won't come off over night, it will take time.
Also, low-carb doesn't guarantee weight loss, only a calorie deficit does.3 -
Weight doesn't melt off like what every fad diet boasts. A pound of loss in a week and a half is great! As long as you are in a deficit you're going to lose. It doesn't matter the approach as long as it's sustainable to your tastes and lifestyle. Congrats on the pound. Are you logging honestly and have you gotten a kitchen scale yet?0

are you expecting to drop 50 lbs a week ?? What are your expectations?
To help you get some perspective. 1lb a week is pretty good weight loss. 2lbs a week is very aggressive. More than that is going to be unrealistic depending on your starting weight.
You are starting a marathon, not a sprint.1 -

I am being honest on my log ins. I have not gotten a scale. Should I?0 -
I am also way under on my calorie count. Watching my fat as well as my carbs. I noticed my sodium has spiked. I'm thinking the cheese?0

Good, and yes. You can be much more accurate with logging when you can actually weigh out portions. It's how I accurately log beans, protein, and many other things.2

Low carb diets are generally high fat. Trying to be low on both is usually very difficult and/or counterproductive.
ETA: Yes, you should get a food/kitchen scale if you believe you are "way under your calorie count," at the beginning of a low-carb diet (which usually means a large initial water-weight drop), and still feel you aren't seeing expected results. Ordinarily, I would say 1 lb in a week or 10 days is fine, but it does seem low given your statement about being "way under" your calorie goal and starting a low-carb regime.

My goal is 45 lbs. I understand it isn't coming off overnight. I just was expecting a little more than 1 lb. that's all.0

45 pounds will take maybe 45 weeks or so. Patience! You can do this, don't get discouraged. Baby steps.3

If your sodium intake is too high, you'll retain a lot of water weight. The first week I switched to low carb, I accidentally went very low cal because I hadn't figured out my macros or recipes yet and I lost 6lbs - mostly water I assume, because along with reducing my carbs to less than 20g a day, I also drastically reduced my sodium levels.

I never tried doing low carb but when I went to my jutritionist and she looked at my logs and said I was eating low carb and to lose weight I needed to eat a few more. I was shocked!
I continued my workout plan, sleep and water, upped the carbs and sure enough the scale started to move again.
I am sure some may disagree but I'm just throwing it out there as it worked for me.
Note: I did stay within my caloric goals.
