    just got this one from a co worker for chicken BBQ on the grill-
    The chicken sauce is really easy to make, and the longer the chicken sits in the sauce the more flavorful it is. I’ve BBQ both bone in and boneless. It makes for spectacular chicken.

    Here’s the recipe

    4 eggs

    1 cup white vinegar

    ½ cup vegetable oil

    1 tsp pepper

    2 tsp salt

    3 tsp poultry seasoning

    Eat something besides chicken...variety is the spice of life.

    Eat fish, shell fish, lean cuts of beef/pork, etc...you don't have to just eat chicken.

    Rather than recipes I can suggest Penzey's spice mixes. Penzeys.com I believe. I am so lazy and their amazing flavors save my cooking like four times a week! Original Taco is great on chicken as is Greek, Galena Street; Northwoods is popular... so many more. Season, skillet, add a veggie on the side and done.

    Do that with Greek seasoning for example and throw some olives and sun-dried tomatoes in and a 1/4 cup of broth & let it reduce. Great with cauliflower if you like it or potato and green beans. A good cast iron skillet has been priceless for good old chicken too. I feel you on the chicken boredom!!!

    OMG Penzeys. We love Arizona Dreaming for chicken faijitas and we just tried Krakow Nights on some turkey burgers- absolutely amazing. We eat fish, pork, chicken, lean ground beef, bacon... don't have to just eat chicken!

    Mrs. Dash is also awesome for easy seasonings to make different dishes- many great, and salt free, options as well.

    Also, consider seafood, any seafood. Prawns/shrimp are particularly good sources of quality protein.

    One of the best and most versatile sources of protein. It's far, far leaner than beef, pork or lamb.

    So what? If OP is eating so much chicken she's going nuts, probably best she figure out how to fit a wee bit more fat in her diet so she can eat something else.

    Besides, as has already been mentioned, there are cuts of pork that are just as lean as chicken breast.

    OP, good protein substitutes have already been suggested. Maybe let us know how you've been eating chicken so we can suggest something different?

    Personally, I love a good curry. Those can be done with any protein, or none. Roasted chicken thighs are another favorite (though I haven't made them in a while because I hate cleaning up oil spatter).

    1 ½ cups full-fat Greek yogurt
    2 tablespoons lemon juice
    1 ½ tablespoons ground turmeric
    2 tablespoons garam masala
    2 tablespoons ground cumin
    3 pounds chicken thighs, on the bone
    ¼ pound unsalted butter
    4 teaspoons neutral oil, like vegetable or canola oil
    2 medium-size yellow onions, peeled and diced
    4 cloves garlic, peeled and minced
    3 tablespoons fresh ginger, peeled and grated or finely diced
    1 tablespoon cumin seeds
    1 cinnamon stick
    2 medium-size tomatoes, diced
    2 red chiles, like Anaheim, or 1 jalapeño pepper, seeded and diced
    Kosher salt to taste
    ⅔ cup chicken stock, low-sodium or homemade
    1 ½ cups cream
    1 ½ teaspoons tomato paste
    3 tablespoons ground almonds, or finely chopped almonds
    ½ bunch cilantro leaves, stems removed.

    PREPARATION
    Whisk together the yogurt, lemon juice, turmeric, garam masala and cumin in a large bowl. Put the chicken in, and coat with the marinade. Cover, and refrigerate (for up to a day).

    In a large pan over medium heat, melt the butter in the oil until it starts to foam. Add the onions, and cook, stirring frequently, until translucent. Add the garlic, ginger and cumin seeds, and cook until the onions start to brown.

    Add the cinnamon stick, tomatoes, chiles and salt, and cook until the chiles are soft, about 10 minutes.

    Add the chicken and marinade to the pan, and cook for 5 minutes, then add the chicken stock. Bring the mixture to a boil, then lower the heat and simmer, uncovered, for approximately 30 minutes.

    Stir in the cream and tomato paste, and simmer until the chicken is cooked through, approximately 10 to 15 minutes.

    Add the almonds, cook for an additional 5 minutes and remove from the heat. Garnish with the cilantro leaves.

    Chicken drumsticks have become a staple for me. I'll lay out 12 on a baking sheet, drizzle it all with olive oil, and then season each set of 4 differently (all on the same sheet!) One set might be basic salt, pepper, and Italian seasoning. Another might be basted with BBQ sauce. Mix & matching spices can give you all sorts of flavors- Greek, Italian, Indian, Morrocan, etc. I get the spice-mix recipes from Pinterest. With the cooked drumsticks, I might eat them as-is and just add veggies and salads as sides. Or I might cut it up and put it in a salad, sandwich, or wrap. That way it's a little different each day but with the convenience of one cooking session.

    I made this tonight and it was fantastic. I used brown rice instead of Jasmine rice and added onion as well. The leftovers will be a burrito bowl tomorrow night and Wednesday for lunch.

    For a marinade- soak the chicken in it, then grill it.

    I can't say I have an answer, but we lived in for several years, and about the only decent protein we could purchase was chicken. So I know how you feel. Thankfully, I loved fahitas made with chicken and made them all the time. I am not one of those people who obsess over foods (except pasta), so rather than trying to find a lot of recipes, I just cook the basic food (mostly chicken for protein). My husband likes to eat plain and clean, which makes cooking pretty easy. I guess you could say that I've adopted an "eat to live" philosophy rather than a "live to eat" on. If you like fahitas with tomato sauce, I can send you my Mexican recipe. Also, home made burritos have worked well in my diet plan. Try making some. Good luck.

    I'm in the same boat and getting very tired of chicken every night. I just made this for dinner tonight though, and it was delicious! I used about half as much pesto and mozz as it called for, and substituted sundried tomatoes bc I don't like raw tomatoes, and added a little spinach! Very juicy and flavorful!

    I like to do a chicken fajita

    8 oz chicken,
    1 large green pepper,
    1 large red pepper,
    1 large onion,
    1 packet of fajita seasoning.

    You cut up and brown the chicken in a pan with cooking spray then add in the veg and seasoning. To finish off the veg add water a 1/4 cup at a time (as it evaporates, you don't want soup just moisture to steam the veg) until they are tender stiring the whole time. I eat this plain without tortillas but if you have the extra calories you can toss a couple in.

    Maybe that is what happened to me. I may have a valid excuse for being crazy. I have eating chicken every day for 2 1/2 years. I eat it everyday. I sometimes cook other proteins to break the monotony but I eat chicken at least once every day. I can't eat the same veggies over and over, but chicken I can.
