Inexpensive, Healthy, Few Ingredients?

My husband does our grocery shopping and he flat out refuses to buy several different ingredients for one meal, especailly if it is something he will not eat (he is rather picky). He also prefers to buy prepackaged meals because of the low price. I am not able to purchase separate food for my meals (we have our expenses divided, and he happens to be in charge of buying the food, and I am in charge of paying for other things that we share). Does anyone have any suggestions of food that either (A) will last through several meals or (b) is inexpensive and easy to prepare?

beans, lentils, chick peas. those are super, super cheap and very good (plus pack protein). also bagged "salad" kits are great!0

It might help to make a grocery list using the same ingredients for different meals within the same week. Personally, I love leftovers and that helps in a household of only 2 I think the more you start making dinners that he enjoys, the more items he will "allow" on hand. (I hope there's not an underlying issue here of "who's in charge"). Just as, I bought whole wheat flour, flax seed meal, and wheat germ for one specific recipe (branana bread and it's so good!) and then they just sat in my fridge.....Until I decided to frequent cooking websites like allrecipes.com and foodnetwork.com to conjure up something with my different ingredients. :bigsmile: One our favorites in my house is 1 lb ground turkey meat, browned, with a can of drained and rinsed black beans for taco night. You can turn them into taco salad the next day and it lasts about a week. Tilapia (a white fish) is fairly cheap, I buy the individually frozen fillets, season with lemon pepper and serve with instant white rice and fresh steamed broccoli for another complete meal.
