Cold picnic dinner ideas...
... So I am going to an elegrant picnic event I have dessert and appy course figured out but I need a main. The food needs to be served cold and be packable and as fancy as possible. Looking for suggestions? Oh also no shellfish SO has allergies.

Made this yesterday for the Fourth:

Turned it into a pasta salad by adding a box of cooked rotini noodles, also fresh mozzarella pearls and halved cherry tomatoes.
It was beautiful and I served it room temp but it would also be good cold for a picnic. I'm planning to add chicken and take it for lunch and eat it cold today.2 -

This pear and blue cheese salad is lovely. It would work great with rotisserie chicken or grilled flank steak.

Thank you for all the ideas, I'm so excited about this picnic, it's a knife and fork dinner. Aiming for fancy and elegent yet still packable. Plus several glasses of wine!!!0

My go to summer salad- is okay outside in the heat for hours and is pretty healthy and colorful. Mix it all up and eat!
· 1 can rinsed black beans
· 3 cans drained sweet corn
· ½ diced sweet onion
· 1 diced English cucumber (remove seeds)
· 1 diced red bell pepper
· 1 tbs olive oil
· 3 tbs red wine vinegar
· Salt and pepper to taste
· 1 bunch died parsley (optional)1
