Low Calorie Cornbread Muffins (49 Calories per Muffin)

Morning guys! So, the easiest way for me to give up something is to have a healthier replacement for it. One of the hardest things for me to give up, so far, has been bread. I love to have bread with my dinner. So I searched and finally found a recipe for a low calorie cornbread. I'm a Southern girl, so I love cornbread and I figured if I could have it a couple of times a week, I wouldn't feel deprived. I made this last night and they are really simple and delicious.
1 cup cornmeal
4 tbsp. low calorie mayonnaise
1 1/2 cups buttermilk
Mix together and pour into 12 muffin tins sprayed with "I can't believe it's not butter" cooking spray. Bake in a 450 degree oven for 15-20 minutes.
Nutrition Facts: Calories 49, Calories from Fat 6, Total Fat .6g, Sodium 36mg, Cholesterol 1mg, Carbohydrates 9.3g, Dietary Fiber .7g, Sugars 1.5g, Protein 1.8g

No, they do just fine. Cornbread never rises too far anyway and in traditional cornbread recipes, the egg helps it rise. I am guessing the mayonnaise is accomplishing this. That's a total guess on my part. :happy:0 -

Oh I'm feeling kind of silly now! I just looked at my cornmeal and it's the "self-rising" kind, so that's why! Sorry, guess I should have looked earlier!0
