Can you use MFP for a low-carb diet? And if so how do you program how much fat, carbs, protein and calories you're supposed to eat in a day?

You can use mfp to eat however you like.... You could play around with macro percentages, or just know what macros you need to hit and do that, ignoring the default settings.

Calorie goals shouldn't change, it's not affected by different ways of eating.

You can change the default settings to match your own program. Under settings click on goals and edit the numbers to your preferred target.

Anyone know how to make MFP track NET carbs instead of total carbs?

    Absolutely.
On the site, go to Goals under your Home page. Edit your Daily Nutrition Goals. Fiddle with the percentages until you have them close to where you want them.
(If you don't know what numbers to use, try googling "ankerl keto calc" or "ketogains calc." Either will help you figure out your numbers.)
    In general though:
Carbs are a ceiling in grams.
Protein a range (dependent upon your height/weight/activity level) (grams)
Fill the rest of your intake with fat. (you guessed it, in grams)

You can change your micronutrients while in Goals as well.

If you are wanting to do Net Carbs (and are in the U.S. UK entries already have fiber subtracted), rearrange your columns so that you have Carbs and Fiber next to one another, so you only must subtract. When I care about Net Carbs, I just put my total in my Notes.
You can change the columns that appear in your diary by going to Home<Settings<Diary Settings. You can also alter the names of your meals and how many show in the diary, as well as change whether or not your diary is Public, Private or Friends Only.

If you need any other low-carb help, on other MFP help, come join the Low-Carber group:

Or just PM me. Either will get any further questions answered.
    HTH.
