I need recipe for quinoa.

Bought some of this stuff last week, and need some recipe ideas. I'm not sure what to do with it. (I'm vegetarian.)

    Chop some shallots or onions, saute in a little olive oil. Add some chopped mushrooms, and continue to saute for a few minutes till the mushrooms are soft. Add quinoa - about a handful per person. Add some stock - about twice as much as the quinoa. Simmer for 15 minutes, until the little quinoa beads have "popped".

    Leftovers freeze and reheat beautifully.

    Substitute the cous cous for quinoa. It's soooooooooo good!

    I make it like I would rice and use it as a side dish. I found I like it much more when I use chicken broth instead of water. You can also add some curry powder, toasted almond slivers, and golden raisins for a really good side.

    hello!

    It's lovely with roasted tomatoes, butternut squash and red peppers, especially cold in a salad with lime juice, olive oil etc. oh and pumkin seeds if you like.

    You probably already know this being veggie (I am too) but its a brilliant source of protein as it is a complete protein. Even got my meat eating boyfriend to love it before a good swim!

    The current issue of Clean Eating Magazine has a great Quinoa recipe. Also, Tosca Reno's Clean Eating Cookbook has a few great one as well. I also found a book written by Patricia Green & Carolyn Hamming called Quinoa, The Everyday Superfood!

    Cold Quinoa Salad- Its a pretty flexible recipe in my mind, I adjust the quantities based on what I have on hand
    1 Cup uncooked Quinoa
    1 onion
    1-2 sweet peppers
    1 tomato
    1 tsp ginger (fresh or paste...NOT DRIED)
    1 tsp garlic (optional depending on preference)
    1-2 cup spinach or other leafy green veggie (can be left out)
    1/4 cup Italian dressing (you can use light or not depending on preference)
    1/2 cup dried cranberries (optional)
    1 Cucumber
    Rinse Quinoa, put in pot and bring to a boil then reduce to simmer (the typical directions on the box)
    Dice all the veggies
    When you reduce the quinoa to a simmer add the ginger, garlic, cut sweet peppers and onions.
    Once the quinoa is cooked add everything else, mix up and put in the fridge
    Like I said, its flexible, usually this amount will make me 3-4 lunches or enough for a family of 4 as a side at dinner plus 1 lunch
    Hope its helpful and the directions are understandable
    The calories are generally around 180 per cup, but figure out for each batch you make because I never make it the same twice

    I use it in place of rice in fried rice.

    I love quinoa! But if it isn't pre-washed, you have to rinse it well. (I always buy Red Mill - it's pre-washed). Then I dry-toast it in a sauce pan until it's lightly browned and the seeds start to pop - add stock and seasonings (1.5 to 1 ratio), cover and simmer for 15 min - let stand for 10, just like rice. YUM!

    Thanks... I just bought some in a box - I can't remember the brand. A friend of mine said quinoa was known to irritate stomachs... now I'm a little eery. LOL
