Have you looked at skinnytaste.com? The lady who writes recipes there does a lot of Asian-inspired cuisine (her Thai options are super yummy). She has probably done some Chinese food too.0

I like to make my own seasoned tofu and vegetables, Szechuan style (spicy). I also like to use organic soba noodles instead of rice since it has fewer calories and holds flavor so well. Nothing wrong with steamed white rice, though.0

Ohhhhhhh yes. Grab your pen (or printer) and save THIS for your recipe book! It's one of our favorites.
3/4 lb. whole wheat angel hair pasta
1 T. grated fresh ginger
1 T. brown sugar
2 T. dark sesame oil
2 T. rice vinegar
1/4 c. peanut butter
1/4 c. soy sauce
1/2 tsp. minced garlic
1/4 tsp. ea. salt and ground cayenne
1 cucumber, peeled/halved/seeded & sliced diagonally (because it's pretty that way)
3 scallions, thinly sliced
1 large red bell pepper, julienned
1 T. toasted sesame seeds
Cook the noodles til tender but still slightly al dente. Drain and rinse with cold water.
Combine next 8 ingredients (through cayenne) in food processor and blend until smooth.
Toss the sauce with the noodles; pile with the mixed veggies and sprinkle with sesame seeds. Serve @ room temp.
(Note: Can add chopped cooked chicken breast to make an entree, or fresh steamed broccoli or sugar snap peas for more color)0 -
