I've made zucchini brownies in the past that turned out great, however my last attempt was a fail. I think the difference is that I chopped instead of purreed this time.1

Zucchini boats are awesome, so much variety. I always have zucchini on hand-- zoodles, sauteed or grilled. Saute with dash of salt, pepper, and chili powder.1

Looking for some new recipes... thanks!1

Sounds weird, but you can make refried beans with zucchinis (using no beans). Love these!0

We just made zucchini fritters the other day for breakfast & they were sooooo good!
4 cups zucchini grated & strained
4 eggs
Salt, pepper, onion powder
Stir together and drop scoops into pan. Flatten then out. 2-3 min/side. Tasted a lot like yummy hashbrowns!1 -

It's a little bit bland, so I will use more spices next time.1 -

It's in French though but
200g fresh goat cheese
3 eggs
2 zucchinis
1/3 cup milk
1 tbsp olive oil
100g flour
1/2 tsp baking powder
fresh herbs (I used chives and thyme)
salt and pepper
Drain the liquid from the goat cheese (mine didn't have much, I used the log fresh goat cheese type)
Grate the zucchinis and sautee them in olive oil until the moisture is gone
Mix eggs and goat cheese. Add baking powder, flour and milk.
Add salt and pepper, then mix in the zucchinis and herbs
Bake 45 minutes at 350 in a loaf pan (make sure to grease the pan)
It was tasty!

I like to add it to my scrambled eggs, plus sausage if my calories for the day allow. One of my go-to meals.0

All of the above. Plus, I add it to ground turkey for soft taco or burrito fillings. Delicious.0

There are a bunch of recipes here I’ve used for all the extra garden veggies.

I like to grate it, squeeze out any excess water, and use it in place of crabmeat in my crabcake recipe.0

Zucchini Butter
Grate it, salt it, squeeze it. Then cook it low in some olive oil for a while. It eventually turns to a butter-like consistency. Spread on a baguette and enjoy.1
