My freezer went on the fritz and all of my TWENTY THREE pints of Halo Top completely thawed :(

Think a hand mixer and xanthan gum might do the trick?

    Just refreeze it. Personally I don't mind melted ice cream refroze.

    I've found HaloTop and the similar don't refreeze like normal ice-cream - it gets very crystalized
