Ways to use leftover plain Greek Yogurt?

I like putting it on toast. Or just a little bit on the toast under a fried egg, it adds a little bit of creaminess. If you're not a big fan of the consistency, maybe you could pick up a cheesecloth and strain the greek yogurt to get it a thicker consistency, more like cream cheese.
But then you're stuck with the problem of what to do with the leftover whey.
Another think you could do with greek yogurt is add it to mashed potatoes to add that creaminess (instead of adding milk or butter, or in addition to adding those things!)
Me, too! I thought I was the only one.
Or you could add it to cake and cookie batters in place of whatever liquid is called for.0 -

You can make ranch dressing out of it. I don’t have the link anymore, but I’m sure you can find it w a quick google search. Tastes like the expensive yogurt based ones in the produce section.0

As many others have mentioned, I use Greek yogurt as a substitute for everything creamy.
But if you just want to eat it for breakfast: mix in some applesauce to thin the consistency. Frozen thawed fruit works well, too.0 -
I mixed a serving with a teaspoon of real maple syrup, 10 g of walnuts, and crumbled 2 ginger snap cookies into it for an evening snack. Its my new favorite.2

All the suggestions above sound good. Also, stir things in it to change the consistency. I like to throw in raisins, slivered almonds and all-bran cereal with a bit of cinnamon or pie spice. Makes it tasty-crunchy. I also like to add savory ingredients like oil-cured olives.1

I put low cal jam in mine and then put it in the freezer and when frozen eat it like a low cal ice cream.1

Greek yogurt cheese:
Line a strainer with cheesecloth.
Set over a bowl.
Dump in yogurt.
Leave overnight.
Then:
Gather cheesecloth up around the yogurt cheese, squeeze out any remaining liquid.
The result is a high-protein 'Greek cream cheese' that can be added to things, either sweet or savory.
I just made a cheesecake with it, and also I have mixed in cumin, garlic, and mint to make a killer topping for curries or dip for vegetables or spread for seedy crackers.0 -

I don't like yogurt much at all unless it has fruit. I bought some Oikos Greek yogurt the other day and it was plain strawberry flavored so I added some strawberries to it when I ate it. I like it that way. So maybe add some fruit to it?0
