When I was growing up, Christmas Eve dessert was always fruit salad and an assortment of cookies, baked by my tiny Norwegian Great Grandmother. SO, my faves are Norske Kroner, fattigman, and these crazy thin lacy oatmeal cookies that she used to lay over a rolling pin while hot so they would curl.2

We always make Ritz Cracker cookies. Peanut butter between two Ritz crackers dipped in vanilla almond bark. We'd usually put some fun Christmas sprinkles on top. No bake, easy to make, and oh-so-tasty!2

I also love a good, soft peanut butter cookie, or a soft chocolate chip. I make them soft but substituting shortening for half the butter and lowering the baking time down a bit. I've learned that if you take them out a minute or two early or so and leave them on the pan, cookies will finish baking, and I like this method because it does keep them softer.1 -
Shortbread cookies are my all-time favourite. Specifically my mom's recipe. It's finicky and I have never mastered it myself.0

My MIL's sugar cookies are a serious cookie masterpiece. I have never tasted another sugar cookie that can even compare. But my favorite to make myself are these macaroons. The addition of the orange zest is what sets them apart. So yummy.

You know, it reminds me of an event I went to last year... someone brought over some homemade spritz cookies. They looked gorgeous and there was a big variety... and they tasted like cardboard.
Meanwhile my not-so-great looking cookies were delicious and gone in no time (just basic sugar and almond crescent cookies).
I'm leaning towards those pecan balls for a change though. Or maybe some cranberry pistachio biscotti (I bought a biscotti pan so maybe they will actually look relatively even for once). It doesn't help that I don't care for anise/peppermint/ginger/spiced flavors at that time of the year. Or maybe shortbread. Anyone got a good shortbread cookie recipe?0
