Trying to drink at last a gallon of water a day. Do you count Crystal Lite as water drank??

I don't track water, but since all liquids (except for alcohol) meet your need for hydration, I would count Crystal Light.3

Crystal light counts.
However, a gallon is excessive. 8 glasses is fine and you probably don't even need that.

On the other hand, some of us need a water goal because we mistake thirst for hunger. I don't know how many times I've found myself in the kitchen eating a snack when I actually needed water.
If I added Crystal Light to water, which I don't, I'd count it. I count coffee.1 -

I count things such as tea and sparkling water as part of my water log for the day so I would also count crystal light in the water log as well!0

I rarely drink anything besides plain water, but some people don't like water and struggle with that.

Beer doesn't count
Also, Crystal light as a water flavor is really overpowering, I usually use 2-3x the amount of water recommended.

A gallon isn't always excessive, just like 8 glasses may not be enough for some people. I'm an extremely thirsty person who sweats a LOT. Without trying to drink more water, I measured how much I drink in a day and it's often over a gallon (if I work out that day) of just water before even adding in coffee and tea. Everyone is different.1 -

It's my go-to drink. Currently my favorite is cherry vodka with lemonade crystal light, although it does get too sweet for me pretty quickly.

For hydration purposes, your fluid intake doesn't specifically have to be water. Fluid from other sources counts, such as fruits/fruit juices, soups, milk, etc.
And just because you modify it to be more palatable, doesn't make it less hydrating ( such as a water additive ).
You should count it ( if you track it ) ... I do.
As far as whether a gallon a day is an issue, it would take significantly more intake, or an existing condition, to put him in danger of hyperhydration. Normally functioning kidneys can process 3 pints to 1 quart per hour. My personal intake is 4-6 quarts a day of fluids, on average.3
