I may be overlooking this, but is there a way to edit a meal you've created?

No, you either delete it and start over or you enter it into the FOOD page and then you can edit specific ingredients. (at least on the Web version)0

In the web version, the way I edit a meal I have created is to log it, make any changes I want to make, then click on "remember meal" under quick tools, just like I was creating a new meal, and when the page loads for naming the meal, there's a button with the option "Or, Replace an Existing Meal." When you click on the button, you'll be able to scroll through the names of all your existing meals and choose the one want to replace.
