    For the Friday Fast I eat:

    Tomato soup and grilled cheese.
    Black beans and rice with green peppers and tomatoes.
    Vegetable soup and cornbread
    Macaroni and cheese
    Spaghetti squash with marinara sauce


    Same concept, there's just a religious reason for me. :)

    Curry with chickpeas instead if chicken.

    Chilly with quorn mince instead of beef mince.

    Salad with feta instead of steak.

    Egg Mayo sandwiches instead of deli meat.

    The questing us what do you normally cook that you can easily substitute something meat free into.

    Hlelem: kinda like the Tunisian version of minestrone. It's usually in a crock pot when I make it.

    Beans and potatoes, lentils, stir fry, spaghetti/zoodles with sauce and tvp or meatless balls, veggies and rice, veggie soup, potato soup. Could go all day!

    I found this outstanding noodle-less butternut squash lasagne recipe that i've been eating for the past week. Takes a bit of work but totally worth it. And relatively low calorie for a generous portion if you use low fat dairy products and skip the bechamel.

    Baked/jacket potatoes topped with spiced black beans (cumin, chili, garlic, onion), cheddar, salsa, green onions

    Minestrone soup with white beans and crusty bread, sometimes I put an egg on it

    Whole wheat pasta + roasted vegetables + grated cheese, also sometimes add egg to this

    Shakshuka

    Rice bowl with stir-fried spinach, avocado, soft-boiled egg. + hot sauce or sambal olek

    Veggie and cheese fritatta and tater tots :smile:

    Black bean quesadillas with salsa and guacamole

    I make vegetable soups, veggie curries and daals. I also tried making side salads full of veggies and make my own dressings so that I know what is going into them.

    Here are some dinners I've had recently:

    French lentil and argula salad with cashew cheese

    Grilled tortillas filled with potatoes, sweet potatoes, and black beans

    Cauliflower and roasted fennel soup

    Ethiopian stew with teff and pomegranate seeds,

    Cucumber and fennel salad with vinaigrette

    Jalapeno-onion cornbread, dijon brussels sprouts, mac & cheese

    Grilled tortillas filled with potatoes and spinach

    Asparagus soup

    Polenta with broccoli

    Sweet potatoes & broccoli roasted in the oven with salt, pepper & chilli flakes are my STAPLE side dishes. For a main, i love making veggie tacos! I typically throw in beans, guac, a lot of lettuce and sometimes tofu or tempeh too!
  • Tofu cauliflower curry and tofu stir fries are favorites here-I particularly like those because it’s easy to adjust flavors to each person’s taste.

    Burritos with refried beans are good and easy.

    And my family’s favorite lazy vegetarian dinner is rotini with garbanzo beans.
