DELICIOUS Wheat Zucchini Muffins

These are absolutely delicious- and so healthy! Great for breakfast, snacks, or dessert! Stevia and brown sugar may be replaced with one cup regular sugar. Egg whites may be replaced with whole eggs. Flaxseed and walnuts may be omitted.

1.5 C wheat flour
1.5 C white flour
.5 C Stevia in the Raw
.5 C Brown Sugar
.5 C Canola Oil
.5 C Applesauce
1 C walnuts
3 t cinnamon
.5 t nutmeg
3-4 C Zucchini
3 t Baking Powder
1 t Baking Soda
2 egg whites
1 egg
1-2 T flaxseed
3 t vanilla extract

Mix dry ingredients, set aside. Mix wet ingredients, then add zucchini and walnuts. Incorporate dry ingredients into wet. Bake at 350 for 18-22 mins for cupcake-size muffins. Enjoy! (Can also be made as a bread- simply increase the bake time)
