it depends on whether you want to make them at home, or buy something packaged and prepared.. i have suggestions for both anyway
for brekky, you can buy little yogurt tubs with muesli or berries on the top, that would be a good option.
if you wanted to make something, a breakfast wrap is great, with egg & ham and salsa/tomatoes and that type of stuff.
for lunch, a simple sandwhich with healthy fillings is good and easy. (cottage cheese and chicken is delicious, or if he likes spreads, low sugar jams are a good.)
even a salad, with chicken or something, is perfect in a little container
when driving, a healthy milkshake would be easy to drink. it isn't a meal exactly but it sure would be a nice snack!
