Blueberry Cobbler Oatmeal

-1/2 cup of quick cooking oats
-1/2 cup of cottage cheese(i use fiber one) + a little water(dont add too much-maybe 3tablespoons) or you can just leave out the cottage cheese and make it normally-with milk if you want it creamy the cottage cheese makes it creamy and extra protein!
-1 teaspoon of cinnamon & then cook in microwave
-top with 1/2 of the blueberry sauce, mascarpone cheese or greek yogurt, crumb topping and 1 tablespoon of toasted walnuts or almonds
Blueberry sauce(2 servings):
3/4 cup blueberries
1 tablespoon of agave or honey
1/4 cup water
1 tsp lemon juice
(cook on low heat, stirring occasionally, until blueberries start to break open, you can help break them up with a spoon)
Crumble:
(combine in bowl)
1 tablespoon + 1 teaspoon of organic whole wheat flour
1 tablespoon of melted butter(i used low sodium whipped smart balance)
1 teaspoon cinnamon
1 drop of honey, agave or maple syrup
crumble ingredients on baking sheet and put in oven or toaster oven until lightly browned(watch very closely, doesnt take long)
Custard:
(mix together)
2 tablespoons of mascarpone cheese or greek yogurt(or 1 of each lol)
drop of vanilla extract or & if you want- 1 teaspoon of vanilla protein powder
**this is definitely a higher calorie breakfast...mine came out to be around 485/500 calories, i like my big breakfasts! lol but you can tweak it a little to make it less calories....theres about 20-25grams of protein as well
