Cloud Eggs

Did anyone else try this. I did and could not even come close to getting it right. Is there something I'm missing

    It looked yummy but way too complicated. My guess is that the "cloud" is like a meringue - something I have never been able to master - if you beat the eggwhites too much, it fails; if you don't beat them enough, it fails. LOL. But dang, it looked good!!!!

    I made it today and it turned out great! Beat the eggs until the eggs stand up without falling over.

    I sat there whisking the damn things for 10 min. Finally whipped out the hand mixer and voila! Perfect.

    Now I struggle with not breaking the yolks! I got 2 okay for my husband’s this morning. Then changed it up for mine. I added Strawberries and some sugar free syrup.c941d7bb411k.jpeg

    I thought it looked pretty but too much effort when I like the taste of normal eggs so much. But it did look pretty!

    Whipped the eggs into peaks, added the parm and it emulsified them. Tried it a second time... same thing. Find it hard to believe this recipe works

    I don’t add the cheese until after I use the electric beater for a couple of minutes.

    I used to make my scrambled eggs that way. Separate the eggs, beat the whites, add good things, cook like scrambled eggs, stirring gently.
    When almost done, add yolks and stir gently. Yolks stay soft and creamy. Makes much more volume.

    Meringue: Whites of 4 eggs, 1/4 tsp Cream of Tartar, 1/4 cup granulated sugar.
    Using a hand blender, begin blending the egg whites. Add Cream of Tartar by sprinkling. Add sugar by sprinking.
    Blend until it's the texture you want. It won't take long.

    That's what I used on my mom's banana pudding recipe. The sugar is optional.
