Quick and easy vegetable stew

With these cold nights I wanted something filling and warm (as we all do) so I experimented making a vegetable stew with beef Oxo favouring (actual meat could be used but I had none today).

I purchased a bag of suup ready prepared soup veggies (in the fridge section) from Lidl for 89p, chopped up half a large broccoli and about 4 small potatoes. Boil them all down, I then added mixed herbs and other spices I had in the cupboard (ground cayenne, chillies, salt and pepper etc but add what you like) cook down and add 2 crumbled beef Oxo cubes. Once all seems well cooked I made up a small amount of bisto powder with cold water (about 1 mug full) and stirred in slowly (add more if thicker mix is wanted).

Just ensure there's plenty of water in it as you go so keep checking frequently, some boils out but you need quite a bit for the bisto to thicken.

Result is a veggie packed stew that hits the spot! I've made a huge pot to freeze for the coming weeks, just a tip to taste as you go so as to add spices or seasoning before the bisto as it's ready to serve once that's added and stirred for 2 minutes.

The kids also loved it and they've eaten many veggies they would never try before.

Based on the calories of the veg and potatoes (main ingredients) a small bowl is well under 200 calories im not sure what the gravy and spices add (I'm new to healthy eating so still learning).
