Eating lots of saturated fats (20 years old) after loosing weight.

I was classed as overweight and I did little exercise when I was around 17 / 18. I did not look overweight but I could tell that my body size was mainly from fat and not actually muscle.
Now my weight is good and need to start working out more - plus gaining muscle on my arms.
I used to eat allot of salmon and fats with high omega 3 contents and lots of fibre and protein whilst trying to loose weight. Carbs were mainly oatmeal, pasta, rice and other grains. I still do eat these but I have found myself eating lots more dairy than I used too. Foods like cheese, Pizza and burgers (not mcdonalds) and ground beef for bolognese. I don't feel any different and I know saturated fats are not the enemy as the media makes out but I am still skeptical about having too much? I try and stick to my calorie goal of 2400.
My question is what is a safe level to consume on a daily basis for someone who has no health issues and no known heart problems.

NHS (UK Health Service) recommend no more than 30g per day for a male.
