How do they figure this out and what should I have for mine?

I work an office job, but I also workout 5-6 days a week.

    If you're going with MFP's calories exercise isn't included, so you would set to sedentary and then eat that amount of calories plus at least a portion of your exercise calories

    If you log strength training under cardiovascular, you will get a calorie burn estimate.

    Another approach would be to look up your TDEE (total daily energy expenditure) - your maintenance including exercise and take a cut from there. Then don't log any exercise in MFP (the cardio section, anyway). If your exercise is going to be consistent.....this will work too.

    Not true - you are just misunderstanding how the strength part of the exercise diary works - it's just a journal with no calorie functionality. Unlike the CV part of your diary.....

    Search for "strength training" from your CV diary and log the entire duration of your lifting workout. It gives a rough estimate based on METS and your weight.

    As for your original activity setting question if your aren't active outside of your office job then set yourself as sedentary and log/eat back your exercise.
    Give it a few weeks and make adjustments based on actual results, hunger, energy levels etc...
