    Because I only use the whites, that's what I buy: a quart-sized carton of whites only. An egg white is about 1 Tbsp, so just use three egg whites (or two eggs and add some fat & calories).

    Oh these sound really good, wonder about adding some pumpkin?

    I LOVE pumpkin cheesecake, but I haven't tried it with this recipe yet. I'd probably add about 1/4 c to start with, and some cinnamon and nutmeg for flavor...if you try it before I do, let me know how it turns out!

    Just pulled my first test batch (I cut all ingredients by half) out of the oven! They sure look good to me:

    The recipe I adapted these from calls for 2/3 graham cracker crumbs, 2 Tbsp butter, and 2 Tbsp sugar...so I would probably use about half that just to keep carbs/calories down, substituting a light margarine and xylitol for butter and sugar. I might try to go a little lighter on the margarine, too. After all, you only need enough to make the crumbs stick together.
