Baked Tofu Marinade?
I need a simple marinade for baked tofu.
In my cupboard I have:
Sesame oil (not toasted)
Tamari
Maple syrup and honey
Is that enough for a decent marinade and in what quantities?
Do I really need rice wine vinegar?
Most recipes online are long and I want to avoid spices and acids because they tend to irritate my stomach.

These should make a great marinade! Does the zest of lemons or limes also bother your stomach? If not, I would add a teaspoon or so of the zest to a couple of tablespoons of the oil, and a tablespoon each of the tamari and syrup. You can also infuse maple syrup with any number of flavors - fresh ginger, citrus peel, and spices and herbs. Just bring the maple syrup to a boil, add whatever flavor you want to infuse, and let simmer gently for five minutes. Set aside until cool and strain. Perhaps if you are not using the actual spices, you could tolerate it. Just a thought.1

I really don't need that much flavor. The place I order tofu from uses plain fried tofu. I eat it as is and put a little of the house sauce on my rice.0 -
Olive oil and lemon works for just about anything! Basil, oregano or rosemary are a nice addition but not necessary.0

I bake mine with a bit of sirracha and a touch of Tamari to thin it out which is really good1

Yes, add a bit of heat to it if you can. Those ingredients are basically a variant of what I do: soy sauce, honey, siracha, lime juice. So that should turn out great! Especially if you already like it plain. I'm not quite there yet..0

You can omit the vinegar. To be honest, more often than not I bake it unmarinated: just slice it onto a cookie sheet and bake until crisp chewy, and then toss it with broccoli, soy sauce, and a little garlic powder when it's done.
Also, if you have peanut butter, you can make a peanut sauce with the sesame oil, tamari, maple syrup, and a touch of lime, if you can tolerate it, or ginger if you can't.0 -

I marinate my tofu in soy sauce and liquid smoke. When I bake it, I add salt, pepper and garlic powder. So freakin' good!0
