Help me decide. I have a craving for coconut shrimp.... but baked coconut shrimp? Anyone try making these let me know?

Otherwise, I need some dinner ideas, not too "Diet-y" so the boyfriend doesn't complain.

Yes! I've done it and we really enjoy it! Shrimp cook quickly, so just be sure not to overcook it. Cooking at a high heat will help crisp the outside in shorter time. And my hubby loves it too! I've also done it with chicken tenders. Sometimes I grind up almonds and use almond meal as the coating.
  • i make shrimp (steamed or grilled with evo) salad for my fiance with lawry's teriaki sauce and he loves it! sometimes i add a perdue chicken breast to it, if i know he is really hungry.

p.s. on rare occasions i find that if i make something too "diety" he will throw it all on a sandwich bun (dont laugh) so i just try to think about his mood and sometimes i will fix a healthy meal for me, and take his portion and throw it on a sandwich bun!

    good luck!

We're having meatloaf for dinner tonight, as that's what my 7 year old requested. I'm just making a healthier version of it. I'm not a good or adventurous good, though, so I'm probably not much help, LOL.

I had bad breakfast and lunch, so it's Tuna salad with no bread, crackers, anything that has carbs basically. Maybe on a bed of spinach with tomatoes.

Well I know I'm late to respond, and you've already made dinner, but this is a great baked coconut shrimp recipe.
