Hi everyone, I work in construction so have very limited facilities when it comes to preparing lunch and other meals to continue eating well while at work, does anyone have any advice on this matter like what to eat, considering the appliances available to me are usually only a kettle and a microwave oven, thanks in advance

Meal prep on an off day and put into tupperware. Easy to heat up in a microwave.

To make prep day easy, I do sheet pan meals. Just choose a meat, veggies along with either red or sweet potatoes, then cut up the meat and veggies and potatoes, then toss in oil and seasoning of your choice then bake all on one sheet pan. Divide into 4-5 containers. There are tons of recipes for them online.

If you don’t have one already, I’d highly recommend buying a slow cooker. They run about $20-30, and they make a HUGE amount of food. Throw in protein and a sauce/seasonings. Meat is done in a few hours, and you can throw raw or frozen veggies in for another half hour for a complete meal. I used to meal prep in mine every week before I got my Instant Pot. I actually wish I didn’t shove mine into the dark corners of the garage... hahaha

I like soups and bread. Granted it takes a little bit of prep before you go to work. I do a big batch on the weekend and freeze it in portions. Then in the morning before work, I'd melt it all down on the stove top and put it in a Thermos. It'll stay hot for hours and usually when I'm eating lunch, I'll just pair it with a piece of bread.

My SO is in civil construction so can end up on sites in the middle of nowhere.

He does a Costco shop every 2-3 weeks and stocks up on a couple of cases of soup, a case of chilli, salmon, tuna, and ham. He also has a big jar of nuts for snacks.
Weekly he gets a salad bag, tomatoes, apples, oranges, bananas, and bread. He keeps these in a collapsible cool bag along with condiments.
All of this is kept in the back of his truck.

He starts the week with the food we cooked extra portions of on the weekend but, as he doesn't know where he will be most of the week (often 2-3 nights away too), it is more practical to have a food pantry in his truck at all times.

Yes, he is a label reader and aims to fulfil his nutritional goals as well as possible.

He also has a gym bag with running and swimming gear back there.

    Cheers, h.
