Burnt out on a HCLF diet

Hey everyone,
I was vegan for about 4-5 years with maybe 1 or 2 short periods where I ate a little fish. (I did it for health reasons but highly respect those who do it for ethical reasons. Please don't troll me)....
Anyway I also have PKD and started gaining a ton of weight out of nowhere. About 10 KG over the course of a year. Turns out my high carb diet was making me fat and sick. I was eating spelt and starchy vegetables with whole grains like rice, millet, couscous, etc. to help get my calories up. I ate organic and local when possible (lots of apples in my region). I was supplementing Vitamin D (cause of my PKD), B-12, and taking pre and probiotics. And turns out my body can't handle carbs anymore. Im currently getting tested for adrenal issues due to the PKD and Diabetes. The adrenals sit on top of the kidneys so its no wonder they could be messed up with kidney issues. Its such a frustrating things to be dealing with especially when it comes to my disease.
I was wondering if any "healthy" vegans were having the same issue after a 4-5 year span.
Also - My blood test show im not deficit in anyway. We can't figure out why carbs especially various flours like Chick Pea, Coconut, Spelt, etc. make me sick. Maybe I can update you when my results come back.
Anyway I added meat to my diet and do more of a Lower (not keto) whole foods paleo style diet. Mostly Chicken and Fish and keep my carbs under 100-120 per day and I am doing much better. In fact, I lost 3 kg in about 4 weeks. I am happy with the results and feel much better.
Just curious what other people experience.

If you are having health issues why not dump all the unnecessary flavor diets and any restrictions they have and just eat a lower carb lifestyle?1

Kidney patients have limited protein. generally less then .8 g / kg. That means The rest of the calories come from Fat and Carbs. and because Carbs are a no-go that means increase fat. But Ketosis is also toxic for kidney patients so its about finding a good balance.3

Sounds like a referral to a dietician specialising in kidney disease would be a good idea.11 -
We're you counting calories? A couple of lbs a month is only a 250 cal surplus per day, not difficult to do if you're not paying attention.
I don't know much of anything about PKD and I'm not vegetarian. But there are societies all over the world that are largely vegetarian and have much lower rates of obesity than the western world, so I doubt just the fact that you were vegan made you fat and sick.

We're you counting calories? A couple of lbs a month is only a 250 cal surplus per day, not difficult to do if you're not paying attention.
I don't know much of anything about PKD and I'm not vegetarian. But there are societies all over the world that are largely vegetarian and have much lower rates of obesity than the western world, so I doubt just the fact that you were vegan made you fat and sick.

Ah, I don't have any expertise there, sorry. I'm glad you're feeling better!1 -
I would concur with an appointment with a registered dietitian.
I am not as sure as you are that your calorie counting during your period of weight gain points to a problem with carbs as opposed to a problem with your calorie counting. That's where careful logging of everything before you eat it and in conjunction with weighing everything and choosing appropriate and personally checked database entries will allow you to come to an informed conclusion. If you have a 'carb' problem I would expect that your (western medicine with a medical degree) doctor would explain to you how it came about. If that has been done, forgive, and see point a about an appointment with a registered dietitian.
Absent a condition that makes eating carbs impossible, there is a wide gamut between eating carbs only, and eating carbs at a level of ketosis. Diabetics DO eat carbs.
I would think that a 55 % C, 35% F, 10 % P may come close to not exceeding your 0.8/kg protein in the context of a sub 2K Cal diet and a normal weight individual. That's using back of napkin calculations... but see a registered dietitian for your fairly specific requirements otherwise3
