Made a savory oatmeal. Cooked steel-cut oats in chicken broth, added chopped sun-dried tomatoes and a bay leaf while they simmered. Sauteed some bulk Italian sausage meat, then set it aside and used the grease to cook some chopped onions and minced garlic as the base for a quick sauce with canned diced fire-roasted tomatoes and tomato paste. Added salt, pepper, basil, oregano, and a tiny pinch of cloves, cooked down, a splash of red wine, cooked down again. Once the oatmeal was done I mixed in the sausage meat, then layered it in bowls with the sauce. Sprinkled some grated Parmesan on top, and garnished with sliced cherry tomatoes and fresh basil.
I've probably prepared dishes that are tastier, but this is the best one I've ever invented.2 -
https://www.ambitiouskitchen.com/crunchy-cashew-thai-quinoa-salad-with-ginger-peanut-dressing/ - I subbed coleslaw mix for the cabbage and carrots to save on prep time, and I used a premade stonewall kitchen thai peanut sauce, again to save on prep. Flavors and texture were out of this world!

Buffalo chicken penne pasta.
One Box of penne pasta
one package of chicken breast
one ball of mozzarella cheese (I use the baseball sized one by BelGioios)
buffalo wing sauce (I use Sweet baby Ray's)
Ranch
Two ways to do the chicken- cook in crock pot with half a containers of Buffalo sauce and shred when cooked or boil chicken then cut into cubes and cover in sauce while the rest is cooking.
boil/drain the pasta
cube cheese into half inch chunks
combine pasta, chicken, cheese, sauce (at least one bottles worth, i tend to use two), bake in the oven for 15 minutes (really just to melt the cheese). Add Ranch to cool it down as you wish.
It freezes great- hence the WHOLE box and WHOLE package of chicken. Use half and half if you prefer2 -

Black bean and bacon soup. I made it and it became a family favorite. The problem is I can't stop eating it when I make it. My version is similar to this, except mine has a lot more bacon and a lot more lime, no ketchup.
Cuban steak is good also, I am going to make this again without the breading.
Both have a nice citrus flavor.1 -
