I love cheesecake
this is a peanut butter base with an extra light low fat cheese spread (extra light philidelphia) and I used Gelatine to make it set. Used a touch of evaporated milk. It has almond flavouring and a touch of baileys. nom nom nom!!!!
It ain't perfect but I'm definitely getting better!!!

ok I think my diary is open so you can see nutritional info on there for one slice.
Basically though I literally fly by the seat of my pants.
Ingredients
BASE
digestive biscuits
peanut butter
Leave to set in fridge
TOP
2 sachets of gelatine
Evaporated milk
Extra light Philadelphia
almond essence
dash of baileys (optional)
whisk it all up, leave in the fridge for a bit and then pour over biscuit base. For me, in order to make it low cal I use gelatine or low sugar jelly instead of whipping cream, eggs etc. The most fattening bit is the base but I'd rather use peanut butter than normal butter as a little big goes a long way.
According to my calculations it's approx 350 calories a slice which for cheesecake is pretty good, however I'm not a nutritionist so juggle around with it, you could probably do it with less evaporated milk than I used, and use just mainly Philadelphia. The consistency isn't great yet, I'm still experimenting but it tasted awesome!0
