Lately I've had a strange obsession with salmon..i crave it almost everyday...
Right now im using a basic "salmon rub" but would like to try some new flavors.. any ideas?

I'm loving salmon lately too. I mix 1 Tbsp of light cream cheese with dried dill and spread on salmon and bake it. I love this, especially with a tossed salad with balsamic vinegar.

I just had to laugh at myself because when I saw the title of your post I immediately thought it was going to be from someone who lived in my tiny little hometown... Salmon, Idaho. so I clicked on it to see if I knew you. :laugh:
that being said, I am a sucker (haha, fish pun intended) for the simple garlic and butter on pretty much all the fish I eat. other than that, I don't have much in the way of suggestions. I look forward to seeing what suggestions others have for you though!0 -

I rub it with a little olive oil and sprinkle on salt-free Mrs DASH lemon pepper seasoning. Awesome.0

I LOVE to marinate mine in a little bit of teriyaki sauce with brown sugar (another user suggested maple syrup instead). wrap in foil and bake at 350 for 10 minutes per 1" thickness of filet + add 10 minutes for the foil (so 1.5" filet you bake for 25 minutes).
Delish!
Serve with baked sweet potato and steamed broccoli!0 -

I thought maybe it was about using salmon in the can. We love that, but just not many ways to cook it except for salmon patties. I can't even get salmon here in this small town.0

I too love salmon...I do a honey mustard glaze...it depends on how much you doing but below are the ingredients....
Honey
Dijon mustard
Lemon juice
Mix together and pour over salmon and bake...delicious!!!0 -

rubbed with e.v.o.o, tomato slices, onion, and fresh lemon juice squirted... baked on 350 with tented foil... about 15 minutes.. delish!0

Bump! I was never big on Salmon until this winter...dunno know why but I love it now! I'm still learning ways to prepare it.
I did it in parchment paper with: (Serves 2, I forgot nutritional value, I entered it separately)
2- 3 oz Salmon fillets
12 grape tomatoes
1 med/large onion
2 c zucchini,
thumb sized fresh ginger (grated) root
2 cloves garlic (peeled & chopped)
1 large sweet potato (diced)
2 T extra virgin olive oil
1 t curry/coriander
1 t cumin
1/2 t turmeric
1/2 t chili powder
Heat olive oil, sauté onion x2 min, add zucchini, sweet potato x2min, add ginger, garlic, turmeric, chili powder, coriander, cumin & tomatoes until fragrant.
Place each 3 oz Salmon piece in parchment paper, spoon sauté mixture equally over fish. Fold parchment paper lengthwise, then fold ends & tuck under.
Bake at 350 for 20-30 minutes or until Salmon flakes with a fork.

We're smoking a wild sockeye fillet tomorrow - so satisfying, so addicting, so many ways to use it the next day (in salads, pasta, whatever.) Usually it gets a rub of Chinese 5 spice, salt, pepper or cayenne and a little agave nectar or honey. We may change it a little, who knows. We like to use alder wood for fish. Can't wait!0

That's exactly what I do! My mom loves it this way and she doesn't even like the taste of salmon.0 -
Make a marinade of approximately 1/3 cup of soya sauce, 1/3 cup of brown sugar, grate a little lemon zest, juice of half a lemon, grate a little fresh ginger and garlic and a splash of olive oil. Marinade for an hour or two and then barbeque. It is awesome...the outside carmelizes...it is to die for!
I just started eating salmon myself this year and now I can't get enough!
Also, if you have leftovers, it's delicious in a pasta salad (I use bowties) with asparagus, red onion and black olives, red wine vinegar and olive oil.0 -
I season with salt and pepper then pop in the oven. When its almost cooked I start to glaze it with Terryaki Sauce. I serve with brown rice and steamed broccoli.
