So last Monday, I decided to mix it up to try to bust through a plateau.
I started doing IF 16:8. Not only have I lost 8 pounds, but my resting heart rate has dropped 5 bpm.
I haven’t changed anything other than my eating window.
I still walk at least 5 Miles throughout the day.
I’m assuming this is a good thing, but can anyone explain to me why it dropped what seems so drastically to me.

Coincidence.
Plateaus will break when they break. Nothing to do with an eating window.
As far as RHR, it could be due to stress, sleep, salt, hydration, caffeine, hormones. Keep doing the readings. It's not about an eating window.11 -
Feeling happy and content (and that includes with eating habits), will make you calmer, but you didn't lose 8 pounds of fat in a week, it's water weight.10

As long as you maintain a calorie deficit. Just like eating at any other time of the day.
Calories are what matter for weight loss. What time of the day you eat them is personal preference for satiety/adherence, workout performance, etc.8 -

I was in a 7 week long plateau - hadn't lost a single pound - 3 days of IF 16:8 and down 4 lbs already. I just don't see how that could be a coincidence! If it were 1 week or 2, okay, but 7 weeks?6

Always do the math for fast weight loss or gain if you think it was fat.
3500 calorie about per lb of fat.
So if you think you lost 4 lbs of fat in 3days:
4 x 3500 / 3 days = 4667 daily calorie deficit for each of 3 days.
Did IF really have you eat 4667 calories less than you burn for each of those 3 days?
Obviously not.
I'll bet you've been stressed over those 7 wks and gaining stress Cortisol based water weight the whole time. Even while you could have been losing inches.
The new eating window might have finally gotten some stress levels down - excited to try something new, feeling confident, whoosh.8 -

It's also been shown to help blood pressure, if starting elevated.
I saw that improvement.
So if your HR was elevated for some reason - perhaps.
Mine was already 45, didn't lower with IF.

Before you can start losing weight your body needs to reduce inflammation? I generally don't do intermittent fasting because I can get migraines if I get too hungry, and skipping breakfast usually makes me too hungry. Glad I never heard that I have to reduce inflammation in order to lose weight, and believe it, or I may not have lost 70+ pounds and be in maintenance. Or, I would have made it a lot harder on myself than necessary.
IF is great for those who find it helps them comply with their calorie goals. It's the unproven claims that the "detractors" are against.
ETA: I would be curious to see your sources as to what kind of inflammation IF is supposed to reduce, and how it impacts your health, but if reducing inflammation is necessary for weight loss, then all of us who have lost weight must have reduced inflammation. A lot, if not most, of us, don't IF. So how is it that we reduced inflammation, if it's necessary?5
