Vegetarian Keto?

Hi everyone! I'd like to try my hand in the keto diet, I've done a good amount of research but what I'm mostly struggling with as a vegetarian is breakfast. I do not like eggs and obviously I don't eat meat (although I'm all for meat substitues like Morningstar farms bac'n!). Does anyone have suggestions for a good, vegetarian-friendly breakfast? Usually my breakfast is carb-filled like a slice of PB bread or oatmeal so not sure how to proceed...

Maybe scrambled tofu? When we do that I cook it like eggs with salt, turmeric, maybe garlic and an herb blend... add a veggie sausage 😋
Keto pancakes are good. Make a big batch and freeze.
Or forget breakfast and make a bulletproof coffee!

Plain greek yogurt with some berries.
Cottage cheese with some berries (or savory with some low-carb veggies).
Dinner for breakfast (i.e., there's no law that says you have to eat "breakfast foods" for breakfast).1 -
