    LOL. I just put this recipe into another thread before I saw this one.
    Pumpkin, chickpea, and black bean chili
    - 15 ounce can pumpkin purée
    - 29 ounce can tomato sauce (although next time I make this I'm going to 1/2 the tomato sauce and use a can of red enchilada sauce with it)
    - 29 ounces water
    - 1-2 packets taco seasoning, depending on how spicy you want it to be
    - 1 bag frozen corn
    - 1 can black beans (undrained)
    - 1 can chickpeas (drained)
    - Juice from 2 limes

    I put this in the crockpot in the morning and it's ready to eat when I get home from work. I usually put about an ounce of shredded cheese on top

    I posted in another thread, but here are some truly awesome pumpkin cookies:

    PUMPKIN COOKIES

    INGREDIENTS:

    2 ½ cups flour
    ½ tsp. baking soda
    ¼ tsp. salt
    2 tsp. pumpkin pie spice (cinnamon, ginger, nutmeg, allspice)
    1 cup brown sugar
    ½ cup white sugar
    ¾ cup butter
    1 egg
    1 cup canned pumpkin
    1 tsp. vanilla
    1 cup raisins
    ½ cup walnuts

    DIRECTIONS:

    Preheat oven to 300 degrees.
    Combine dry ingredients except sugars.
    In a separate bowl, beat sugars and butter to a grainy paste.
    Add egg, pumpkin, and vanilla.
    Beat until light and fluffy.
    Add flour mixture, raisins, and walnuts.
    Blend until combined.
    Drop rounded tablespoons onto ungreased cookie sheets.
    Bake for 22-25 minutes or until slightly brown.
    Transfer to a cool surface.

    YEILD: About 3 dozen
