LOADED BAKED POTATO SOUP RECIPE
Ingredients
8 potatoes, peeled and cubed
1/2 cup butter
1/2 cup all-purpose flour
8 cups milk
1/4 cup chopped onion
1 (8 ounce) container sour cream
1/2 cup shredded Cheddar cheese
1/2 cup turkey bacon
salt and pepper to taste
Directions
1.Place cubed potatoes into a glass dish, and cook in the microwave oven for 7 to 10 minutes, or until soft.
2.While the potatoes are cooking, melt the butter in a large pot over medium-high heat. Whisk in flour until smooth, then gradually stir in the milk. Bring to a boil, then reduce heat to medium, and simmer for 5 to 10 minutes, or until slightly thickened.
3.Stir in the potatoes and onion, and cook for 5 more minutes. Stir in the sour cream and Cheddar cheese until melted and well blended. Season with salt and pepper.
**I add a little cornstarch/water mixture to thicken it a little, cubed potatoes can also be subsituted with frozen hashbrowns!!

How large is a serving? 338 is a lot if it's only a cup.0

Serving size is ONE cup... Caloric content can be reduced by simply omitting the bacon.0

I've done this same soup at home for years but I do it with Skim milk, Light Sour Cream, and I don't add the cheese. If you use Corn starch to thicken it really doens't need it, and instead you can use it as a garnish on your cup of soup. Also, same with the bacon, just put a little springle on top, or switch to Lowfat ham instead. Cuts a lot of calries and tastes just the same!0

This sounds good.... wonder if you could use half the amount of potatoes (i use yukon golds because of their low starch content) and then use half the amount of something like butternut squash.... fat free sour cream, fat free cheese, etc..... ideas?0
