I make a big batch of this every couple of weeks and freeze it so I always have it on hand. It's great with a slice of toast and a glass of milk to cut the heat but that makes for a rather large meal--I usually leave the cheese off for this reason. Note: add the additional cayenne at your own risk, the 1 tbsp called for in the main body of the recipe is plenty!!0 -

We have a hurricane headed our way, so hopefully we are having fish tacos and cantaloupe. If our power goes out, we will be having peanut butter and banana sandwiches. So it’s a toss up! 😁6

hubby wants gourmet sloppy joes. The thought of ground beef makes me sick anymore. I think I will have a turkey burger on a brioche bun....saved my carbs for dinner---yea, I know, not good to eat them late, but oh well.0

I'm eating leftover lentil & smoked sausage soup with spinach, served with generous dash of hot sauce + Parmesan cheese. Adapted from this recipe: https://growingupgabel.com/slow-cooker-lentil-and-sausage-soup/. I use more vegetables, beef broth, 1/4 tsp ground thyme, and cut the sausage bite sized for easy eating. I also cook 3-4 hours on high. Breaks the lentils down a bit and makes it kind of stew-like.0

Tonight will be polenta with feta, pan seared artichoke quarters, and I'll do something with some ground turkey just not sure what yet LOL.1

Kale salad with poppy seed dressing with sunflower seeds and cranberries. Side of toast with one hard boiled egg and vegetable seasoning. Dessert will be a protein bar and tea

Pub night tonight so it is 2 glasses of wine and whatever takes my fancy.
I have been working my way through the burger variations without the bun. Nothing against buns, just that they changed them and I hate the new one- it's sweet
I have discovered a new tasty meal by accident.
