I make a big batch of this every couple of weeks and freeze it so I always have it on hand. It's great with a slice of toast and a glass of milk to cut the heat but that makes for a rather large meal--I usually leave the cheese off for this reason. Note: add the additional cayenne at your own risk, the 1 tbsp called for in the main body of the recipe is plenty!!

We have a hurricane headed our way, so hopefully we are having fish tacos and cantaloupe. If our power goes out, we will be having peanut butter and banana sandwiches. So it’s a toss up! 😁

hubby wants gourmet sloppy joes. The thought of ground beef makes me sick anymore. I think I will have a turkey burger on a brioche bun....saved my carbs for dinner---yea, I know, not good to eat them late, but oh well.

I'm eating leftover lentil & smoked sausage soup with spinach, served with generous dash of hot sauce + Parmesan cheese. Adapted from this recipe: https://growingupgabel.com/slow-cooker-lentil-and-sausage-soup/. I use more vegetables, beef broth, 1/4 tsp ground thyme, and cut the sausage bite sized for easy eating. I also cook 3-4 hours on high. Breaks the lentils down a bit and makes it kind of stew-like.
